We have only changed the way Colorado sees the Mexican cuisine, and also how we see it ourselves.. Born in Culiacán, Sinaloa, Fausto's culinary journey began in 2001 with his first restaurant, specializing in traditional Tortas Ahogadas. Inspired by his grandmother and uncles, he developed a passion for Mexican cuisine that led him to open his first food stand, Tortar, at 16. After moving to the U.S. in 2004, he expanded his ventures with Rosa Mexican Kitchen in 2020, Rumbo 52 in 2023, and Agave Underground in Fort Collins, offering modern Mexican cuisine rooted in tradition.

Edgar Ruiz, a chef deeply connected to his Mexican roots, has a passion for authentic cuisine inspired by his family. Over the years, Edgar has dedicated himself to perfecting traditional Mexican dishes, striving for authenticity in every recipe.

Returning to the culinary world, Edgar took on the role of Executive Chef at Hilton and launched Hacienda Maya in Thornton, followed by Rosa Mexican Kitchen in Roxborough, Littleton, CO. In 2020, he opened Rosa Thornton, joined Pistachi’s Longmont in 2022, and debuted Rosa Cantina in 2023.
